Heart Smart Banana-Berry Bread

Banana-berry Bread

Vegetable Cooking Spray
1 1/2 cups Flour
3/4 teaspoon cinnamon
1/2 teaspoon Baking Soda
1/2 teaspoon Baking Powder,Double-Acting
1/4 teaspoon nutmeg
2 egg whites -- beaten
1/4 cup orange juice
3/4 cup Sugar
3/4 cup strawberries, frozen -- about1 1/2cwhole
1/2 cup Bananas -- mashed
1/4 cup Vegetable Oil
1 1/2 teaspoons orange peel -- fresh grated

Spray a 9x5" loaf pan with veg. oil spray. Set aside. Preheat oven to
350F.
In a large bowl, combine flour, cinnamon, baking soda, baking powder, and
nutmeg. In a medium bowl, combine egg whites, orange juice, sugar,
berries, banana, oil and orange peel. Add berry mixture to flour mixture,
stirring until just combined.
Pour mixture into prepared loaf pan. Bake in oven 60-70 minutes or until
a wooden toothpick inserted near the center comes out clean. Cool 10
minutes. Remove from pan and cool completely on wire rack. When
completely cooled, wrap and store overnight. Makes one loaf per recipe,
16 servings per loaf.
